Amatriciana in Rome

Amatriciana comes from Amatrice, in the mountainous province of Rieti in Lazio. The sauce is made with guanciale (cured pork cheek), tomato and pecorino. In Roman dialect it’s matriciana.

The guides name bucatini at Trecca and Bianca Trattoria, rigatoni at Armando al Pantheon, Da Enzo and Pennestri, and spaghettone at SantoPalato, Roscioli and Romanè. Gambero Rosso gave Bianca Trattoria its 2025 Champions of Tradition award for amatriciana. Seven of these ten are also in the top 10 for carbonara in Rome.
