What the lists agree on
Panificio Mario in San Vincenzo leads with 4 of the 7 lists: Gambero Rosso, Mentelocale, Scatti di Gusto and Italy Segreta. It is also the only focaccia place in Scatti di Gusto’s guide to Genoa street food.
Agreement is thin after that. No other place is on more than three lists, and nine of the 12 ranked places are named by two.
The lists split by style. The Genoa lists are about focaccia genovese from bakeries, and four ranked places are in the centro storico. CiboToday’s list is about focaccia di Recco col formaggio, and it names both Recco restaurants in the MICHELIN Guide, Da Ö Vittorio and Manuelina. Italy Segreta names Da Ö Vittorio too, which puts it joint second.
Italy Segreta names 9 of the 12 ranked places, more than any other list.
Focaccia in Genoa and Recco
Focaccia genovese is a flat bread with dimples pressed into the top, brushed or sprinkled with olive oil and coarse salt before its last rise. In Genoa people eat it at breakfast or later in the day, sometimes dipped in milk or cappuccino.
Focaccia di Recco col formaggio is a separate dish: two very thin sheets of dough made with flour and olive oil, with cheese between them. The original recipe uses no yeast. Its name is protected as an IGP, which covers focaccia made in Recco, Sori, Camogli and Avegno.
Da Ö Vittorio and Manuelina are sit-down restaurants. The other ranked places are bakeries and focaccerie.
